Anchovy Stir Fry

멸치볶음 Anchovy stir fry is perfect make ahead side dish. It can be stored in an airtight container and refrigerated up to 2 months. Serve as a side dish as you need them with hot steaming rice.

Dried anchovies come in many different sizes. The larger ones are used to render stock and the smaller sizes are those that are used for stir fries. The smaller ones are the best ones to use for this dish. What I liked to use are the baby anchovies. These are available in asian markets.

Ingredients

4 oz salted baby anchovies, about 2 cups

1 tablespoon oil, canola or olive

Soy Sauce Flavoring

2 tablespoons, sake (rice wine) or water
2 teaspoons soy sauce
1 tablespoon sugar, brown or granulated
2 tablespoons light corn syrup

2 teaspoons roasted sesame seeds
1/8 teaspoon freshly ground black pepper
½ teaspoon sesame seed oil
Heat a pan on medium high heat. Once heated, pour the oil.

Spicy Version

Gochujang Sauce
2 tablespoons, sake (rice wine) or water
1 tablespoon gochujang*
2 teaspoons sugar, brown or granulated
1 tablespoon light corn syrup

2 teaspoons roasted sesame seeds
1/8 teaspoon freshly ground black pepper
½ teaspoon sesame seed oil

*Korean Red Pepper Paste – available in Korean markets
With Asian green peppers

With Asian Green Peppers

5 to 7 Asian green peppers, mild or spicy

Place the dried anchovies in the pan and sauté for about a minute stirring constantly.

In a small bowl, combine the sauce ingredients. Mix well to combine.

Pour over the anchovies, and continue to cook for about a minute or until the sauce is absorbed.

Stir in freshly ground black pepper, roasted sesame seeds, and sesame seed oil and turn off the heat.

VARIATIONS

Spicy with gochujang
Substituting the soy sauce dressing with gochujang sauce. After the anchovies have been sautéed, add the gochujang sauce instead of the soy sauce dressing and follow the same steps.

With Asian green peppers
Seed and cut the peppers into thin strips. Add together with the anchovies and pan fry them together. Then follow the same steps as the soy sauce flavoring version.
