Cut a block of tofu in half. Place the tofu on top of 5 sheets of paper towel, cover with another 5 sheets and set a weight on top.
Set aside for at least 30 minutes. If there is too much water, tofu will not brown.
Cut into 1/2 inch cubes. Transfer to a baking sheet.
Tofu pieces can be cut to your desired size. The oven time will need to be adjusted depending on the size of the tofu.
Carefully toss with 2 teaspoons of oil of your choice, 1/4 teaspoon of kosher salt, 2-3 pinches of freshly ground black pepper.
Bake for 15-20 minutes until golden brown.
