2 pounds sweet potatoes
1/2 cup orange juice*
1 tablespoon honey
3/4 teaspoon salt
1/2 teaspoon ground cinnamon or nutmeg
2 tablespoons brown sugar
*For a creamier texture, substitute with cream or half and half.
Peel the sweet potatoes. Rough cut to 2 to 3 inch pieces.
Transfer to a pot. Pour 1 quart of water or enough to just cover the potatoes and bring to a boil. Turn the heat down and simmer for 20 minutes or until fork tender.
In a bowl, combine all the syrup ingredients and mix well.
Using a slotted spoon, ladle out the cooked sweet potatoes with and transfer to an oven proof baking pan. Pour the syrup. Leave the pieces whole or use a fork to mash to the desired texture.
Serve as is or sprinkle with brown sugar and broil for 3 to 5 minutes or until golden brown.
