Soy Bean Sprouts Rice Bowl

The rice bowl takes just as long as it takes to cook the rice.

Prep the rice as you would normally, just add soy bean sprouts on top and you will have a full meal ready to eat when the rice is done.

It is simple to prepare, healthy and delicious.


INGREDIENT LIST

1 pound soy bean sprouts
2 cups short grain rice
2 to 2 1/4 cups water

Sauce

1/2 cup soy sauce

1/4 cup mirin* or
2 tablespoons light corn syrup and 2 tablespoon sake

2 tablespoons sesame seeds
2 bunches (10-12 stalks) green onions (about 2 cups), divided
1 tablespoon sesame seed oil
1 tablespoon red pepper powder

*Sweet cooking rice wine available in Asian markets

Topping Options

Finely chop the meat, chicken, beef, shrimp or roasted tofu*. Season with soy sauce, garlic, freshly ground black pepper. Cook and set aside.

Soy Bean Sprouts

Snap off the tails. Wash in fresh water 2 to 3 times. Drain in a colander.

Rice

In a rice cooker, prepare 2 cups of rice.*

*rinse the rice 2 or 3 times until the water runs almost clear. Add water just about 3/4” above the rice.

Transfer the soy bean sprouts on top of the rice.




Close the lid and turn on the rice cooker



While the rice is cooking…



Chopped Green Onions

Chop the green onions. Set aside 1/2 cup – Leafy part only for garnish.




Sauce

Place sauce ingredients in a small bowl.

Mix to combine.




Asian Sauce

Transfer the sauce to a pretty bowl.




Soy Rice Bowl

Season and cook a meat of your choice. Set aside.

Optional Toppings: Chicken, Shrimp, Beef, Roasted Tofu.


When the rice is done…

As soon as the rice is done cooking, immediately open the rice cooker and turn off the rice cooker. Remove the soy bean sprouts and set aside. With a rice ladle, gently fluff up the rice.




Soy Bean Sprouts Rice Bowl

Transfer about 1 to 1 1/2 cups of rice to a pretty bowl. Top with soy bean sprouts and desired meat toppings. Sprinkle with green onions.



Ready to eat…

Bean Sprouts Rice Bowl
Serve with the sauce. Spoon a desired amount of sauce on top and mix together.
