For 1 cup portion
1 cup water
2 tablespoons sweet rice flour
In a microwave safe cup, dissolve 2 tablespoons of sweet rice flour in one cup of water. Microwave on high for 1 minute. Take it out, with a whisk and mix well, making sure to scrape the sides and bottom. Return it to the microwave for another 40 seconds. Take it out and stir. It should resemble a lemon curd.
For 1/2 cup portion
1/2 cup water
1 tablespoon sweet rice flour
Follow the same instructions as above and adjust the microwave times.
