Place desired amount of dried wood ear mushrooms in a bowl and cover with water.
Leave at room temperature until rehydrated, about 1 hour.
Remove the bottom center stem, this portion is usually very sandy. Rinse several times in clean water. Drain.
Using your fingers, roll into a log.
Juienne to thin strips or to desired thinckness.
Use as directed in the recipe. If there are any leftovers, tightly wrap in plastic wrap and store in a freezer bag.
